Vegetarian Christmas Dinner
Christmas Vegetarian Minestrone
1/2 tsp dried oregano 3 cups water 2 cups chopped zucchini 1/2 tsp dried basil ground black pepper 1 cup diced carrots 1 cup canned kidney beans, drained 4 tsps grated parmesan cheese 3/4 cup diced celery 400 g canned tomatoes 1/4 cup uncooked macaroni 1 onion, chopped 1 cup beans, chopped 1 clove garlic, minced
Place onion in saucepan with one tablespoon water and saute until clear. Add remaining water and and vegetables and bring to the boil. Cover, reduce heat to medium-low and cook for 25 minutes. Add macaroni, cover and cook for another 10 minutes. Place in large bowls, sprinkle with cheese, and serve with crusty bread.
Christmas Dinner Vegetarian Chili
1 (15 ounce) can black beans, rinsed and drained 1 green pepper, chopped 1 medium onion, chopped 3 (15 ounce) cans diced tomatoes 1 package Morningstar Farms Better 'n Burgers, thawed and diced 2 tsps seasoning salt, or to taste 1 tbsp cumin, or to taste 1 tbsp chili powder, or to taste 2 (15 ounce) cans chili beans 1 yellow pepper, chopped 1 (15 ounce) can whole kernel corn, drained 1 tbsp vegetable oil
In a large pot, saute peppers and onion in vegetable oil until tender. Add remaining ingredients and stir thoroughly. Heat until bubbly, stirring regularly. Lower heat and simmer for one hour, stirring occasionally.
Xmas Vegetarian Cake
1 cup curds 1 tsp baking soda 1 tsp vanilla essence 1 cup sugar 4 tbsps chopped nuts 1 cup semolina 4 cardamoms (powdered) 10-15 raisins 4 tbsps melted oil
Mix semolina, sugar and curd. Stir well. Add raisins, nuts, powdered cardamom and vanilla essence. Pre-heat oven to 300 F. Grease a medium size pan with butter. Pour in the mixture and bake for 30-45 minutes.
Cristmas Vegetarian Salad
3 green onions 1 Italian salad kit 1 avocado 9 cherry tomatoes romaine lettuce
Wash and dry lettuce and tear into bite size pieces. Slice the avocado, green onions and tomatoes. Place all ingredients in a large salad bowl and add contents of Italian Salad Kit. Toss thoroughly and serve immediately.
Christmas Vegetarian Casserole - Dinner Recipe
1/4 cup butter, melted 3/4 cup chopped celery 1 (16 ounce) can stewed tomatoes 3/4 cup chopped walnuts or pecans 1/2 cup grated monterey jack cheese 1 medium onion, diced 3/4 cup whole wheat bread crumbs 2 eggs 1 pinch salt and pepper
Combine all ingredients in casserole dish. Mix well. Bake at 350° deegree for 45 minutes.
