Traditional Christmas Dinner


White Christmas Candy

2 1/2 cups Rice Krispies
1 cup desiccated coconut
1 cup full cream milk powder, sifted
5-6 glace green cherries, chopped
1/2 cup mixed dried fruit
8 ounces vegetable shortening or margarine or butter, melted
1/2 cup dried cranberries
3/4 cup powdered sugar, sifted

Put all the dry ingredients in a large bowl and mix.
Add the shortening; stir it so everything is evenly coated.
Press into a greased 12 inch/8 inch sponge roll pan.
Refrigerate until solid.
Cut into small pieces or squares.



Christmas Pasta Salad


12 ounces pasta, christmas design if available
1/2 cup feta cheese, crumbled
1/2 cup green onions, sliced
1 cup red bell peppers, slices
2 tsps lemon juice
1/2 cup celery, sliced
1 tsp oregano
3/4 cup black olives
3/4 can kidney beans, drained and rinsed
1 1/2 cups reduced-calorie Italian dressing
1 (6 ounce) jar marinated artichoke hearts

Drain artichokes, reserving liquid and quarter them.
Place pasta in boiling water and cook according to package directions.
Drain.
Mix pasta with liquid from artichokes.
Add lemon juice, artichokes, beans, olives, green onions, celery, bell peppers and oregano.
Mix gently and chill.
One hour before serving, add feta and Italian dressing.
Mix to coat. Serve cool.



Traditional Christmas Cherry Pie Dinner Recipe

1 (14 1/2 ounce) can pitted   tart cherries
1 cup sugar
1 9 inch pie shell, baked
1 (3 ounce) package cherry gelatin
3 medium firm bananas, sliced
1/4 cup all-purpose flour
1 (8 ounce) can crushed pineapple, undrained
whipped topping
1/2 cup chopped pecans
10-13 drops red food coloring

Drain cherries reserving 2 tablespoons juice.
In a large saucepan combine sugar and flour.
Stir in the pineapple,cherries and reserved juice.
Bring to a boil,cook and stir for 2 minutes or until thickened.
Remove from heat.
Add gelatin powder,stir until dissolved.
Stir in food coloring if desired.
Cool until partially set.
Stir in bananas and pecans.
Pour into the pie shell.
Refrigerate for at least 3 hours befor serving.
Garnish with whipped topping.



Traditional Christmas Spinach Salad

baby spinach
raspberry vinaigrette dressing
chopped red delicious apples
dried cranberries
honey-roasted almonds

Toss baby spinach in a large bowl with the raspberry vinagrette dressing and place on salad plates.
Top with chopped red delicious apples, dried red cranberries and honey-roasted almonds.



Christmas Eggnog Sauce

1/4 tsp nutmeg
3 tbsps brandy
1 (3 ounce) package vanilla pudding mix
1/2 cup whipping cream
3/4 cup cold   milk
2 cups cold eggnog

Pour milk into small mixing bowl.
Add pudding mix and beat at low speed until blended.
Gradually beat in eggnog.
Stir in nutmeg and chill until serving time.
Beat whipping cream until stiff peaks form.
Fold into eggnog mixture along with brandy.



Christmas Freezer Cookies - Traditional Recipe

2 eggs
8 ounces candied cherries, cut into small pieces
4 cups self rising flour
1 cup butter, softened
1 (16 ounce) box brown sugar
1 cup chopped walnuts
8 ounces candied pineapple, cut into small pieces

Mix 1/2 c of the flour with fruit pieces and walnuts. Set aside.
Combine all ingredients into a large bowl.
Mix thoroughly, using hands to mix and dust dough with flour to keep dough from getting too sticky.
Knead in fruit mixture.
Shape into logs and roll in waxed paper.
Freeze overnight and slice into 1/4 cookies.
Bake 9-10 minutes - do not overbake.
Dust with sugar while still warm.
