Christmas Chicken and Potato Dinner
1/2 cup Italian dressing 4 small carrots, cut into small chunks 2 lbs chicken breasts or chicken thighs (bone-in) 1/2 cup parmesan cheese 1 tbls italian seasoning 1 lb potatoes, cut into wedges
Place chicken, potato and carrot in 13" X 9" dish. Pour dressing over dish contents. Sprinkle with seasonings and parmesan cheese. Bake, uncovered, at 400 F deegree for 1 hour.
Oven Roast Xmas Potatoes
1 tblsp olive oil 1-2 tblsp all purpose Greek seasoning 4-5 medium potatoes, scrubbed 1 tblsp butter, melted
Preheat oven to 350 F deegree. Cut potatoes into chunks- no need to peel. Toss with remaining ingredients. Bake for 30-40 minutes turning occasionally until crisp and golden.
Sausage, Apple and Dried Cranberry Stuffing
1 1/2 cups cubed whole wheat bread 2 1/2 tsps dried sage 3/4 cup cranberries 3 3/4 cups cubed white bread 1 1/2 tsps dried rosemary 3/4 cup turkey broth 1 cup diced onions 1 medium apple, peeled, cored 16 ounces bulk seasoned turkey sausage 1/2 tsp dried thyme 1/3 cup chopped parsley 3/4 cup chopped celery 4 tbsps unsalted butter
Preheat oven to 350 F. Bake the whole-wheat and white bread cubes until evenly golden brown. Transfer to bowl. Cook the sausage and chopped onions over moderate heat until fully cooked. Add the celery, sage, rosemary and thyme. Add the sausage mixture to the bread with the apples, cranberries, parsley. Toss mixture well. Drizzle the stock and the melted butter over the mixture.
Easy Potato Casserole
salt and pepper 1 carton ranch dip dried onions 1 package frozen hash browns 4-5 ounces cheddar cheese, grated 1 can cream of potato soup
Mix frozen hash browns, ranch dip, cream of potato soup, salt and pepper Put into crockpot. Place grated cheese on top. Cook on high for about 4 hours.
Pineapple Salad
1/2 cup white sugar 2 tbss dry tapioca 1 (8 ounce) can crushed pineapples, juice reserved 4 apples, cored and chopped 2 cups unsalted peanuts 1 tbsp all-purpose flour 1 (8 ounce) container frozen whipped topping, thawed 2 tbsps cider vinegar
In a medium saucepan, stir together the flour, tapioca, vinegar, sugar, and the reserved pineapple juice. Cook over medium heat, stirring constantly, until thick. Remove from heat and chill. Fold in the whipped topping and chill for at least 1 hour before serving.
Christmas Pudding
2 tbsp cocoa powder 1/2 tsp butter 3 eggs 6 tbsp sugar salt 2 cups milk 1/2 tsp vanilla essence
In a bowl, make a smooth paste of the cocoa powder with a little milk. Mix it with the remaining milk. Whisk the eggs, one at a time. Add all the ingredients except butter. Grease a pudding mould with butter and pour the mixture into it. Cover. Keep this mould in a bigger vessel of boiling water. Cover with a lid and cook. Turn the prepared pudding onto a dish. Garnish as desired: sliced kiwi fruits make a nice garnish.
