Christmas Dinner Ideas
Christmas Eve Punch
2 tsps almond extract 1 (32 ounce) bottle cranberry juice 2/3 cup lemon juice 2 cups orange juice 1 (33 7/8 ounce) bottle ginger ale, chilled 1/2 cup sugar 1 (42 ounce) can unsweetened pineapple juice
Combine cranberry juice, unsweetened pineapple juice, orange juice, lemon juice, sugar, almond extract. Chill. To serve, add ginger ale, stirring well.
Christmas Cheer
1 cinnamon stick 2 cups cranberry juice 2 tbsps lemons, rind of 4 cups apple juice 3 cups pineapple juice 1/4 tsp nutmeg
In a large kettle, combine pineapple juice, apple juice, nutmeg, cranberry juice, cinnamon stick, and sliced lemon peel. Simmer for 10 minutes.
Christmas Crumble
100 g flour 450 g good mincemeat 350 g dessert apples, thinly sliced 1 large banana, sliced 75 g butter 1 small orange, juiced 50 g sugar
Preheat the oven to 400° F. Put the sliced apples in a 1 litre casserole dish, then stir in the mincemeat, the banana and the orange juice. Whizz the flour, butter and sugar in a food processor or work them to crumbs with your fingers. Drizzle over a few drops of water and stir. Sprinkle over the top of the dish and bake until crisp on top.
Christmas Dinner Cake Recipes
1 lemon, rind of, grated 2 ounces candied peel 1 ounce almonds, chopped 4 ounces plain flour 3 eggs 6 ounces sugar 3 tsps mixed spice 8 ounces mixed currants, sultanas & raisins 1 orange, rind of, grated 6 ounces margarine or butter 4 ounces self-raising flour 2 tbsps marmalade
Preheat oven to 300 F deegree and lightly grease 8" cake pan. Cream butter and sugar together until light. Add eggs and mix well. Stir in flour, grated lemon and orange rind, and mixed spice. Fold in almonds, and mixed fruits. Bake for approximately 3 hours. Remove when done and cool on a rack. Turn out of pan and glaze top with marmalade.
Christmas Meatballs Recipe
1 1/2 cups chili sauce 1/4 cup water 2 lbs lean ground beef 2 eggs 1/4 cup minced onions 1 cup breadcrumbs 2 tbsps brown sugar 2 (8 ounce) cans jellied cranberry sauce 1 tbsp lemon juice
Preheat oven to 350° F. In a large bowl mix together the ground beef, bread crumbs, water, minced onion and egg. Roll into small meatballs. Bake in oven for 22-25 minutes turning once. In slow cooker (or large sauce pan) over low heat blend the cranberry sauce, chili sauce, brown sugar and lemon juice. Add meatballs, and simmer for 1 hour before serving.
