Christmas Vegetable Salad

2 cups cauliflower, thinly sliced
1/3 cup green peppers, chopped
1 1/2 tbsps white wine vinegar
pepper
1/4 cup vegetable oil
1/2 cup stuffed green olives, sliced
1 teaspoon salt
1/2 teaspoon sugar
1/3 cup sweet red peppers, chopped
1 1/2 tbsps lemon juice, fresh

In a jar with tight-fitting lid, vinegar, oil, combine lemon juice, sugar, pepper and salt; shake well to combine ingredients.
Combine cauliflower, olives and peppers in a salad bowl; pour dressing over.
Marinate in refrigerator for several hours or overnight.



Christmas Pudding Shots

125 g vanilla ice cream
600 ml milk
100 ml brandy
225 g christmas plum pudding
250 ml double cream

Crumble Christmas pudding into a jug. Add the rest of the ingredients and blend with a hand blender until smooth and fluffy. Leave to chill in fridge for approximately 4 hours.
Blend the mixture again before serving with a little extra milk until you have froth. Pour straight into chilled shot glasses.



Christmas Dinner French Toast

cinnamon
4 eggs, beaten
1 cup milk
butter
nutmeg
1 1/2 cups eggnog

Whisk together egg nog, milk and eggs.
Dip bread in egg mixture, sprinkle bread with cinnamon and nutmeg.
Grill on hot, buttered griddle, until golden brown on each side.
Top with fresh fruit or pie filling and sprinkle with powdered sugar or serve with butter and maple syrup.



Norwegian Christmas Cake

1/4 cup butter, softened
2 eggs
1 cup flour
1 cup sugar
1/2 tsp almond extract

Preheat oven at 350 F.
Cream the sugar and butter.
Beat in the eggs.
Mix in the rest of the ingredients.
Pour entire batter into a greased pie pan or cake pan.
Bake for 25 minutes until top is crispy looking and golden.
Sprinkle with powdered sugar once cooled if desired.



Christmas Cherry Winks

1/3 cup butter
1-1 1/2 cup crushed corn flakes
1/2 cup white sugar
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla
1/4 tsp baking soda
1 tsp grated lemon peel
1/2 cup raisins (seedless)
1 unbeaten egg
1 cup flour
1 (4 ounce) jar maraschino cherries
1/2 cup walnuts (chopped)
2 tbsps milk

Cream first 2 ingredients then beat in egg.
Mix lemon peel, milk and vanilla into the creamed mixture.
Mix baking powder, flour, salt and soda and add to wet mix.
Stir in the raisins and walnuts.
Roll into balls then in crushed corn flakes.
Put half a cherry on top of each cookie, pushing down a bit.
Bake 10-15 minutes in 350 oven.
